Well as promised I have taken some pictures of my Baking today. I baked the best lemon meringue recipe I know and think its only fair that I share the recipe.

Ok here is the recipe...
Best Lemon Meringue pie
Pastry
200g plain flour
100g butter diced
50g icing sugar
finely grated rind of 1 lemon, 1 egg yolk and 3 tbsp of milk.
Sift flour, rub in butter. Mix in remaining ingredients, knead lightly on floured surfaced then leave to rest for 30 mins. Pre heat oven to gas mark 4. Grease 8 inch pie dish with butter. Roll out pastry to roughly 1/4 inch thick and with the help of your rolling pin gently lay over your pie dish, then prick bottom and bake blind with baking beans for 15 mins.
Filling
3 tbsp cornflour
300 ml cold water
juice and grated rind of 2 lemons
175g of caster sugar, 2 eggs separated
First mix cornflour with a little water in a cup. Put remaining water in a pan. Stir in lemon juice rind and cornflour paste from the cup, bring to the boil stirring all the time then simmer cook for 2 minutes. Cool it a little. Stir in 5 tbsps of the sugar and the egg yolks and pour into the pastry shell. In a clean bowl whisk egg whites, then gradually whisk in remaining sugar and spread over the pie.
Turn oven down to gas mark 2 and bake for 40 mins.

Was that the end of my baking no it was not! When I was having a little nosy around attic24's blog I noticed her cookie recipe and believe me them cookies are heaven. Thankyou so much attic24 my children and I are eternally grateful. We added cadburys milk chocolate chunks instead of choc chips, cooked one batch then had to quickly cook another.
